Yummy Healthy Dinner
Yesterday I started the packing process. I packed about 12 boxes. After a long day, I realized I had skipped lunch and was very hungry. I wasn’t quite sure what to make for dinner and was too tired to go out. After looking in my fridge I decided to go with my go-to menu of Stir Fry.
Brown Rice, Carrots, Peas, Green Beans, Bell Pepper, Onion, Cilantro, Tofu … and hot sauce, of course.

While in New York, my co-workers had to prove to me that New York has authentic Mexican food too. I guess it’s a point of contention between the California and New York offices. So here we are lining up at Calexico, a well-regarded taco truck in SoHo.

I made it through my big day. And now I feel great! Everything didn’t turn out as I was expecting, but I think it turned out for the best. I have finally accepted an offer and will be starting my new life as a marketing manager for a fun tech startup on June 1st! I’m so excited. Today is a big day. I am trying to prep myself to make some of the decisions I will surely face within the next 24 hours. I am primarily talking about my first career post business school. However, I am also going through some family stuff that is quiet rough.

Saturday Pizza in SF
After a fairly rough Saturday, I decided to treat myself to some California comfort food by making a delicious veggie pizza. Bell pepper, shiitake mushrooms, spinach, mozzarella and tomato sauce. The pizza turned out much better than I anticipated due to my new pizza pan. The crust was crispy and evenly cooked.
I figured this would be a good pre Bay-to-Breakers dinner.

In two days, I will make my last presentation of business school. I don’t officially graduate until May 22nd, but Thursday sure does feel like an end of an era. Lucca Delicatessen is one of the best Italian deli’s in the world! The have amazing potato salad and sandwiches. When I was little my mom used to bring home potato salad from Lucca on summer nights when we would bbq in the yard. Going to a picnic in the park? Go to Lucca first!

Morning Run at Crissy Field
One of the best places to run in San Francisco (on a wind-less day) is down along the bay at Crissy Field. My favorite part of this run is when you get to the base of the Golden Gate Bridge there is a metal fence with wooden hand prints and paw prints. The tradition begs that the walker/runner/biker and their pets, touch the signs as they turn around and head back the other way.

Monday Soup Day
What better thing to do on a mellow Monday than make a healthy soup? So I went to Rainbow grocery for the ingredients.
Here’s what I did:
1. Chopped up a fresh leek, sauteed it with a little butter and a few shiitake mushrooms.
2. Added organic carrots and celery. A dash of salt, pepper, and red chili flakes.
